No seriously, VPN's are based on the ipsec-protocol, so the risk of 
snooping is pretty low. On the other hand, the normal mails (gmail, 
whatever) will be send in plain-text across the network of your 
provider. Ok, if the UGent itself decides to start snooping on all 
traffic we might have a problem, but i don't think this is the case (yet?).

just use the cisco vpn client software, and configure it so that 
thunderbird goes through the vpn, and all other programs through the 
"normal" network.
Haven't tried it yet, but it might work i think :/
